Asian Slaw

Diane’s Awesome Asian Slaw

Ingredients

  • 2 tablespoons sesame oil
  • 1 tablespoon light soy sauce
  • 1 teaspoon natural peanut butter
  • 1 teaspoon honey
  • 2 tablespoons ginger (freshly grated)
  • 1/4 cup rice vinegar
  • 1 teaspoon lime juice
  • 1 teaspoon dry mustard
  • 1 teaspoon chili powder
  • 1/4 teaspoon black pepper (freshly ground)
  • 2 cups red cabbage (thinly sliced)
  • 2 cups green cabbage (thinly sliced)
  • 2 cups carrot (grated)
  • 1 cup chopped kale leaves
  • 1/2 cup slivered almonds (toasted)
  • 1/4 cup slivered almonds (toasted)

Directions

Step 1. Make the dressing by whisking the first 10 ingredients together (sesame oil through pepper) together.
Step 2. Combine cabbage, carrot and kale in large bowl.
Step 3. Add half of dressing & toss well.
Step 4. Add 1/2 cup almonds and retoss.
Step 5. Add more dressing if desired.
Step 6. Sprinkle each serving with 1 tablespoon toasted almonds before serving.
Step 7. Enjoy!
