Better-for-You Pancakes

Serves 2

Ingredients

  • 2 cups whole wheat flour
  • 1/2 cup rolled oats (pulverized to powder in blender)
  • 2 tablespoons wheat germ
  • 1 tablespoon ground flax seed
  • 1 tablespoon baking powder
  • 1 teaspoon cinnamon
  • 2 1/2 cups low fat milk
  • 1 egg
  • 2 egg whites (beaten)
  • 1/3 cup canola oil
  • 1 teaspoon pure vanilla extract
  • 2 tablespoons honey (or 1/4 teaspoon dried Stevia leaf powder)

Directions

Step 1. Combine first 6 ingredients together (flour through cinnamon).
Step 2. In separate bowl, combine next 6 ingredients together (milk through honey).
Step 3. Add milk mixture to flour mixture.
Step 4. Cook on lightly oiled pan or griddle.
Step 5. Enjoy!

For a healthier dessert – top with whipped cream, sprinkle with cinnamon and drizzle with chocolate syrup.
