Diane’s Chile Relleno Sauce

Ingredients:

  • 1 tablespoon olive oil
  • 1 Small onion (diced)
  • 1 teaspoon garlic (minced)
  • 1/4 teaspoon ground cumin
  • 1/4 cup fresh cilantro
  • 2 cups diced tomatoes
  • 1 cup chicken broth
  • Salt to taste

Step-by-Step Directions:

  1. In medium saucepan, saute onion, garlic & cumin in olive oil until tender.
  2. Add tomatoes and broth, simmer for about 10 minutes
  3. Let cool and puree in blender or food processor.
  4. Return to pan, season to taste with salt and reduce by about 1/4.
  5. Serve warm over Diane’s Chicken Chili Rellenos
  6. ENJOY!
