Diane’s Chile Relleno Sauce

Ingredients:
1 tablespoon olive oil
1 Small onion (diced)
1 teaspoon garlic (minced)
1/4 teaspoon ground cumin
1/4 cup fresh cilantro
2 cups diced tomatoes
1 cup chicken broth
Salt to taste
Step-by-Step Directions:
- In medium saucepan, saute onion, garlic & cumin in olive oil until tender.
- Add tomatoes and broth, simmer for about 10 minutes
- Let cool and puree in blender or food processor.
- Return to pan, season to taste with salt and reduce by about 1/4.
- Serve warm over Diane’s Chicken Chili Rellenos
