Diane’s Creamy Sundried Tomato Spread

1/4 cup sun-dried tomatoes, blanched and drained

8 ounces lowfat cream cheese, room temperature

1/4 cup coarsely chopped walnuts

1/3 cup dry white wine

1 clove garlic, minced

1 teaspoon freshly squeezed lemon juice

1 teaspoon of your favorite dried hot spice

pinch of salt and pepper

1/3 cup fresh basil; finely chopped

Crackers or crostini

 

1. In a food processor combine first 6 ingredients (sundried tomatoes through lemon juice).

2. Process until well-blended.

3. Remove to large bowl and stir in hot spice, salt, pepper and basil.

4. Chill for about 1 hour.

5. Serve with crackers, crostini and raw veggies

6. Enjoy!
