Diane’s Steel Cut Oatmeal with Fruit & Nuts

Ingredients:

  • 1 cup steel cut oats
  • 3 cups boiling water
  • 1 cup low fat milk
  • 1/4 teaspoon pure almond extract
  • 2 tablespoons dried cranberries
  • 2 tablespoons golden raisins
  • 1 tablespoon brown sugar
  • 1/4 teaspoon cinnamon
  • 1 tablespoon slivered almonds
  • 1/4 cup low fat milk

Step-by-Step Directions:

  1. Place oats in a large saucepan. Add the boiling water, stir and simmer for 20 minutes, stirring once.
  2. Add next 7 ingredients to the oatmeal (milk through slivered almonds). Stir gently to combine and cook for 10 minutes longer.
  3. Spoon into bowls and divide remaining milk on top of each serving.
  4. ENJOY!
