Coconut~Almond Irish Cream Liqueur

Ingredients:

  • 1 can coconut milk
  • 1 cup almond milk
  • 2 level tablespoons instant coffee granules
  • 1/4 cup honey
  • zero calorie natural sweetener equivalent to 1 cup sugar
  • 6 egg yolks
  • 1 can coconut milk
  • 1 cup almond milk
  • 2-3 cups Irish Whiskey (I prefer Jameson's and 3 cups 😉
  • 4 teaspoons cocoa powder
  • 2 teaspoons pure vanilla extract
  • 2 teaspoons pure almond extract

Step-by-Step Directions:

  1. In a medium saucepan heat 1 can coconut milk over medium heat until softly boiling.
  2. Whisk in coffee granules, honey and zero calorie sweetener.
  3. Reduce heat and simmer for 5 minutes
  4. Place egg yolks in a small bowl and temper by adding a little warm coconut mixture to them while whisking continuously.
  5. Whisk egg yolks into simmering coconut mixture. Cook for 2 minutes whisking continuously. Set aside to cool.
  6. Pour cooled mixture into a blender, add remaining ingredients and blend until smooth.
  7. Enjoy!
