Mashed Sweet Potatoes

Ingredients

  • 4 Large sweet potatoes (baked & cooled)
  • 2 teaspoons dark brown sugar
  • 1 teaspoon pure maple syrup
  • 1/4 teaspoon pure vanilla extract
  • 2 cups lowfat buttermilk
  • 1/8 teaspoon cinnamon
  • 1/8 teaspoon nutmeg
  • 1 teaspoon fresh lemon juice
  • salt and pepper

Directions

Step 1. Preheat oven to 375
Step 2. Place sweet potatoes on baking sheet and roast until tender-about 30-40 minutes
Step 3. To remove skin easily, peel potatoes while still warm then mash well in large bowl
Step 4. In a medium mixing bowl, whisk together 1 cup buttermilk, brown sugar, syrup, vanilla, cinnamon, nutmeg and lemon juice
Step 5. Add mixture to sweet potatoes and mix well adding additional milk until desired consistency. Season to taste with salt and pepper
Step 6. Enjoy!
