Quick & Delish Gazpacho

Ingredients:
- 3 cucumbers (peeled and diced)
- 2 sweet red peppers (diced)
- 1 Medium red onion (diced)
- 1lb plum tomatoes (diced)
- 2 Medium garlic cloves (minced)
- 16oz low sodium tomato juice
- 2 tablespoons red wine vinegar
- 2 teaspoons lime juice
- 2 teaspoons orange juice
- 2 teaspoons cayenne pepper
- 1 cup parsley (finely chopped (reserve 2T for garnish))
- 1/4 cup cilantro (finely chopped (reserve 2T for garnish))
- 1 avocado (diced)
- 1 teaspoon lime juice
2 teaspoons honey
1 tablespoon blackstrap molasses
Step-by-Step Directions:
- Combine first 10 ingredients (cucumber through cayenne pepper) in a large bow
- Add parsley & cilantro and stir well to combine.
- Season to taste with salt
- Refrigerate for at least 30 minutes
- Serve in individual bowls & garnish with avocado, reserved parsley & cilantro and drizzle with lime juice.
