Pineapple-Mango Salsa

Serves 4-6

Ingredients

  • 1/2 Medium pineapple (peeled, cored, and diced (1 1/2 cups))
  • 1 firm, ripe mango (diced)
  • 1 Large cucumber (peeled and diced)
  • 1/4 cup red onion (diced)
  • 2 Medium tomatoes (cored and diced)
  • 2 teaspoons olive oil
  • 2 cloves garlic (minced)
  • 1/4 cup cilantro (finely chopped)
  • 1 tablespoon fresh lime juice
  • 1 pinch Kosher salt
  • Freshly ground black pepper, to taste

Optional

  • 2 teaspoons jalapeno pepper (chopped)

Directions

Step 1. Combine all ingredients.
Step 2. Let stand at room temperature for 15 minutes to meld flavors.
Step 3. Add pepper to taste.
Step 4. Chill until ready to serve.
