Simple Crock Pot Tomato Ketchup

Ingredients

  • 2lb very ripe tomatoes (or 1 28-ounce can tomato puree)
  • 1 Large sweet onion (coarsely chopped)
  • 2 celery ribs (coarsely chopped)
  • 1 red bell pepper (coarsely chopped)
  • 1/4 cup apple cider vinegar
  • 1/4 cup red wine vinegar
  • 1 clove garlic (crushed)
  • 1 tablespoon honey
  • 1 tablespoon brown sugar
  • 1 teaspoon Dijon mustard
  • 1/8 teaspoon ground cloves
  • 1/4 teaspoon crushed red pepper flakes
  • 1/8 teaspoon allspice
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon salt

Directions

Step 1. Combine all ingredients in high powered blender or food processor and process until smooth.
Step 2. Pour into crock pot, cover and cook on high for 1 hour stirring occasionally.
Step 3. Reduce heat to low and cook for another 1 1/2 hours stirring occasionally. Taste and adjust to your liking. Add more vinegar, sugar, spices, etc.
Step 4. Remove lid and cook until mixture thickens to desired consistency (will take about 45 minutes)
Step 5. Turn off, let ketchup cool and store covered in fridge.
Step 6. Enjoy!
