Wild Mushroom Stuffed Endive Leaves

Serves 8

Ingredients

  • 16 endive leaves (washed)
  • 2 teaspoons olive oil
  • 2 cloves garlic (minced)
  • 4 cups shiitake mushroom caps (finely chopped)
  • 1 cup cremini mushroom caps (finely chopped)
  • 1 cup oyster mushrooms (finely chopped)
  • 2 cups white mushroom caps (finely chopped)
  • 1/4 cup white wine
  • 1/4 cup Marsala wine
  • 2 teaspoons fresh thyme leaves (finely chopped)
  • 2 teaspoons fresh parsley (finely chopped)
  • 1 teaspoon cayenne pepper
  • lots of freshly ground pepper to taste

Directions

Step 1. Arrange endive leaves on platter and chill in refrigerator.
Step 2. Place mushrooms in food processor; pulse until finely chopped.
Step 3. Heat olive oil in pan, add garlic and sauté 2 minutes.
Step 4. Add mushrooms, white & marsala wine. Sauté 5-6 minutes or until most of liquid evaporates.
Step 5. Add thyme, parsley, cayenne & pepper.
Step 6. Cook 3 minutes, stirring occasionally.
Step 7. Add more pepper to taste
Step 8. Spoon 1 tablespoon of mixture into each endive leave.
