Diane’s Jammin’ Jalapeno~Tomatillo Hot Sauce

20 tomatillos (husked and washed)
20 jalapeno peppers (stemmed and seeded)
10 garlic cloves (peeled)
15 mini sweet peppers (stemmed)
1 Vidalia onion (peeled and quartered)
1/2 cup chopped fresh cilantro
2 tablespoons rice wine vinegar
1 tablespoon kosher salt

Step-by-Step Directions:

  1. Preheat oven to 400 degrees.
  2. Place first 5 ingredients in even layer on a rimmed baking sheet.
  3. Roast in oven for 40 minutes.
  4. Remove from oven and let cool for 5 minutes.
  5. Place half of tomatillo mixture in high powered blender blend until smooth.
  6. Add rest of mixture, remaining ingredients and blend until smooth.
  7. Enjoy!
