1/2 Medium pineapple (peeled, cored, and diced (1 1/2 cups))
1 firm, ripe mango (diced)
1 Large cucumber (peeled and diced)
1/4 cup red onion (diced)
2 Medium tomatoes (cored and diced)
2 teaspoons olive oil
2 cloves garlic (minced)
1/4 cup cilantro (finely chopped)
1 tablespoon fresh lime juice
1 pinch Kosher salt
Freshly ground black pepper, to taste
- Combine all ingredients.
- Let stand at room temperature for 15 minutes to meld flavors.
- Add pepper to taste.
- Chill until ready to serve.
