Diane’s Quick and Delish Grilled Cod

4 cod fillets
1 tablespoon extra virgin olive oil
1 Small sweet onion (sliced)
1/4 cup dry white wine
1 teaspoon fresh lemon juice
1 tablespoon fresh dill weed (chopped)
1 teaspoon fresh thyme leaves (chopped)
1 lemon (sliced)

Step-by-Step Directions:

  1. Oil grill racks and preheat grill for medium-high heat
  2. Heat oil in a small skillet add onions and cook for a minute or 2, stirring occasionally
  3. Add white wine, lemon juice and let simmer for a few minutes
  4. Add herbs, remove from heat, stir and let cool slightly
  5. Brush fillets with oil and season with salt and pepper
  6. Place fish on grill and cook for 5 minutes
  7. Baste cod with onion sauce and turn
  8. Baste again and cook for another 5 minutes or until fish is opaque
  9. Remove cod from heat, pour onion mixture on top and garnish with lemon wedges
  10. ENJOY!
