Ingredients:
4 cod fillets
1 tablespoon extra virgin olive oil
1 Small sweet onion (sliced)
1/4 cup dry white wine
1 teaspoon fresh lemon juice
1 tablespoon fresh dill weed (chopped)
1 teaspoon fresh thyme leaves (chopped)
Salt
Pepper
1 lemon (sliced)
Step-by-Step Directions:
- Oil grill racks and preheat grill for medium-high heat
- Heat oil in a small skillet add onions and cook for a minute or 2, stirring occasionally
- Add white wine, lemon juice and let simmer for a few minutes
- Add herbs, remove from heat, stir and let cool slightly
- Brush fillets with oil and season with salt and pepper
- Place fish on grill and cook for 5 minutes
- Baste cod with onion sauce and turn
- Baste again and cook for another 5 minutes or until fish is opaque
- Remove cod from heat, pour onion mixture on top and garnish with lemon wedges
