Diane’s Savory Grilled Sweet Potato Coins

clove garlic (minced)
1 teaspoon ground rosemary
1 tablespoon dijon mustard
1 teaspoon lemon juice
1 tablespoon honey
1 teaspoon salt
1/4 teaspoon pepper
2 tablespoons olive oil
6 Medium sweet potatoes (peeled and cut into 3/4 coins)
2 celery ribs (small dice)
1/2 Small sweet onion (finely chopped)
6-10 basil leaves (coarsely chopped)
1 red bell pepper (small dice)

Step-by-Step Directions:

  1. Whisk all ingredients (from garlic clove through olive oil) together and set aside
  2. Gently toss sweet potato slices with enough dressing to coat. Set remaining dressing aside
  3. Place sweet potato slices on grill over medium heat, close grill top and cook for 5 minutes on each side until tender. Let cool, cut into cubes and place in large mixing bowl
  4. Add remaining ingredients into bowl with sweet potatoes and toss gently to combine
  5. Add 1/2 of remaining dressing, toss gently and add more as needed
  6. ENJOY!
