Diane’s Savory Grilled Sweet Potato Coins

Ingredients:
clove garlic (minced)
1 teaspoon ground rosemary
1 tablespoon dijon mustard
1 teaspoon lemon juice
1 tablespoon honey
1 teaspoon salt
1/4 teaspoon pepper
2 tablespoons olive oil
6 Medium sweet potatoes (peeled and cut into 3/4 coins)
2 celery ribs (small dice)
1/2 Small sweet onion (finely chopped)
6-10 basil leaves (coarsely chopped)
1 red bell pepper (small dice)
Step-by-Step Directions:
- Whisk all ingredients (from garlic clove through olive oil) together and set aside
- Gently toss sweet potato slices with enough dressing to coat. Set remaining dressing aside
- Place sweet potato slices on grill over medium heat, close grill top and cook for 5 minutes on each side until tender. Let cool, cut into cubes and place in large mixing bowl
- Add remaining ingredients into bowl with sweet potatoes and toss gently to combine
- Add 1/2 of remaining dressing, toss gently and add more as needed
