Diane’s Quick Lemon-Thyme Sauce

Ingredients:
2 tablespoons olive oil or butter
2 tablespoon flour
1 cup milk
1/4 cup sour cream
3/4 cups shredded white cheddar cheese
2 tablespoons finely chopped fresh thyme leaves or, if in a pinch, use 1 tablespoon dried thyme leaves
1/2 teaspoon smoked paprika
2 teaspoons freshy squeezed lemon juice
Salt and pepper to taste
Step-by-Step Directions:
- Melt oil or butter in a medium saucepan over medium low heat.
- Add flour and whisk out lumps.
- Slowly pour in milk and cook, whisking continuously, until thick and smooth, about 4 minutes. (be patient…it will thicken).
- Remove from the heat, whisk in sour cream then stir in cheese, thyme, smoked paprika and lemon juice.
- Season to taste with salt and pepper.
- Enjoy!
If, by chance, there is leftover sauce just place in airtight container in the fridge for up to 5 days.
