Diane’s Quick Lemon-Thyme Sauce

Ingredients:

2 tablespoons olive oil or butter
2 tablespoon flour
1 cup milk
1/4 cup sour cream
3/4 cups shredded white cheddar cheese
2 tablespoons finely chopped fresh thyme leaves or, if in a pinch, use 1 tablespoon dried thyme leaves
1/2 teaspoon smoked paprika
2 teaspoons freshy squeezed lemon juice
Salt and pepper to taste

Step-by-Step Directions:

  1. Melt oil or butter in a medium saucepan over medium low heat.
  2. Add flour and whisk out lumps.
  3. Slowly pour in milk and cook, whisking continuously, until thick and smooth, about 4 minutes. (be patient…it will thicken).
  4. Remove from the heat, whisk in sour cream then stir in cheese, thyme, smoked paprika and lemon juice.
  5. Season to taste with salt and pepper.
  6. Enjoy!

If, by chance, there is leftover sauce just place in airtight container in the fridge for up to 5 days.
