Quick & Delish Gazpacho

Ingredients:

  • 3 cucumbers (peeled and diced)
  • 2 sweet red peppers (diced)
  • 1 Medium red onion (diced)
  • 1lb plum tomatoes (diced)
  • 2 Medium garlic cloves (minced)
  • 16oz low sodium tomato juice
  • 2 tablespoons red wine vinegar
  • 2 teaspoons lime juice
  • 2 teaspoons orange juice
  • 2 teaspoons cayenne pepper
  • 1 cup parsley (finely chopped (reserve 2T for garnish))
  • 1/4 cup cilantro (finely chopped (reserve 2T for garnish))
  • 1 avocado (diced)
  • 1 teaspoon lime juice

2 teaspoons honey

1 tablespoon blackstrap molasses

Step-by-Step Directions:

  1. Combine first 10 ingredients (cucumber through cayenne pepper) in a large bow
  2. Add parsley & cilantro and stir well to combine.
  3. Season to taste with salt
  4. Refrigerate for at least 30 minutes
  5. Serve in individual bowls & garnish with avocado, reserved parsley & cilantro and drizzle with lime juice.
  6. Enjoy!
